Regardless of whether or not anyone is around, yes it does. Sound travels! You may not be in the area of the tree but you can hear it!

My psych teacher said sound is just a perception, and he used this as an example and said that because sound isn't real, it's just a perception, it wouldn't make a sound
but even if what he said is true, there's still the fact of animals and bugs
so yes, it DOES make a sound

Tell him I said he's an uninformed hack. Sound exists independent of our perceptions. Sound is caused by vibrations. Even stars make sounds. Sounds are not just heard, but felt. Your psych teach needs to get his head examined to avoid the trap of being crazy, as everyone in his profession is.

This is of course assuming that the tree is located in an area where there is something to hit.

Of course, I am ALSO assuming the tree is located in an area where sound has medium in which to travel through.
