When Atlas went for the apples, he tried tricking him to allow him to deliver the apples to prevent holding it again.
As for the pillars, the only one I remember perfectly are the ones between North Africa and Spain that is like a passage that he built.
But in the end, got tricked. Herc couldn't pick the apples himself, so he went directly to Atlas. Its not like he walked by and Atlas Huck finn'd him into holding them up. Herc went in fully knowing he would have to hold the heavens to get what he needed, and still managed to fool Atlas into taking it back.
So no, you can't really "fool" a guy who already knows whats going to happen.
