It obviously won't turn out this way. But it would be cool if it did.

Hody Jones vs Tony Tony Chopper (both animals who have hated people before)
Zolo vs Zeo (one eye swordsman vs Invisible fishman)
Sanji vs Dosun (strong arms vs strong legs)
Luffy vs Daruma (since they both seem to love to eat)
Nico Robin vs Ikaros Much (multiple arms vs Flower Flower Devil Fruit user)
Hyozou vs Brook (Drunken assassin vs Fencer)
Hammond vs Ussopp (they can both shoot)
Nameless fishman vs Nami (why not?)
Vander Decken vs Franky (process of elimination)

Zolo Vs Zeo is the only match up I agree with.

However I think Sanji VS Vander Decken bc they both want Shirahoshi's heart plus Sanji can school Decken in the ways of finding true love.
