I believe Mifune is labeled hypersonic, and Itachi is only supersonic at best, meaning that Itachi is slashed with multiple swords before he can even register what happened.

I don't know if that would be the case. Itachi could have had an explosive clone enter the battle first. Also he has the Susano'o to protect him and Mifune would get caught in genjutsu pretty easily. I think its a victory for Itachi.
