What genjutsu can Itachi use that doesn't require Suigetsu to look at his hand, eyes etc. and that simply 'works'? There isn't one, Suigetsu has knowledge of all of Itachi's genjutsu, he can easily avoid them all.

Amaterasu keeps on buning untill the target is completly "destroyed". Sorry its just I thought Zetsu had no reason to lie. Plus when Sasuke used it on KB it hit the water and continued to burn. It even burned fire so I assume it can burn water.

That's quite an incredible no limits fallacy, regardless of Zetsu is lying or not. For one, he's no all-knowing being, and for two, what happens when a shield that "can't be destroyed by anything" comes along? Then what? I spot a contradiction.

Amaterasu has been shown burning horrible ineffectively against armor, regular clothing and sand before, I highly doubt it will be effective at all in water, especially when it is a lake and Suigetsu is entirely omnipresent within the bounds of his water. He can shrug off Amaterasu, Itachi has nothing to hurt him.

Amaterasu would have to burn the entire lake if it wants to kill Suigetsu. Which will take forever. Meanwhile, Itachi would be put at risk too.

It's fairly easy to do when the opponent also has no way to hurt you. Suigetsu should be able to fight at his own pace.

It struggled to burn through Samurai armor while A dodged the Amaterasu. It struggled to burn through karin's clothes. It struggled to burn through Nagato's clothes. It struggled to do anything to Gaara's sand as well. Meanwhile, the literal opposite, arch enemy of fire is water. This won't be a problem for Suigetsu and his Suitons.

Can you explain how hes gonna use those superior techniques to do anything to suigetsu? The guy can turn into water that negates 90% of what he has. Now he has knowledge too, that gets rid of genjutsu.

..I was going to restrict Izanami, simply for the fact we have absolutely no idea what it does. But I didn't, because I didn't think anyone would bring it into the picture keeping that aforementioned fact about we have no idea what it does in mind.

That's fine, so Itachi wastes chakra and time activating Susano'o while it's entirely useless. Meanwhile, on the off chance he can sit in it forever and Suigetsu can't break through it, two things are to take into account.

First that Itachi conversely literally has nothing to affect Suigetsu. Second that Suigetsu can easily exploit Susano'o's-'feet' weakness to kill him.

I`m pretty sure Amaterasu burns even water, Suigetsu is still weak to Totsuka sword (or whatever it`s name is), Naruto knew about Genjutsu, but it didn`t help him much, did it? And it is not like he got caught only once!!!
Also, since there are no restrictions, so I say Itachi can use Izanami. Even if it wasn`t shown doesn`t mean he cannot use it. So, he can use it. Next thing you ask: Is Izanami strong enough to beat Suigetsu. Fair enough. Whether you believe me right now or not, wait a week or two and you`ll see for yourself that Izanami could deal with Suigetsu!!!
