Full knowledge isn't always necessary for Itachi to defeat Kenpachi especially if he plays it safe anyway.

But seeing as Bleach is generally seen as a much stronger verse, he breaks thorough Susanoo with ease and crushes Itachi's head like a grape.

That will only occur if Itachi does not retaliate at all and lets Kenapachi hit Susanoo few times.

Bleach is also faster by a long shot, allowing(in situation 1) for Kenny to blitz Itachi. Even with speed evened out in scenario 2, all Byakua has to do is avoid Susanoo until Itachi runs out of chakra and then mess him up with shikai.

Kenpachi figured out a way to beat Tosen's Bankai(which blocks off all of his senses but touch), meaning he isn't stupid, he just likes to rush in and form strategy as he goes. Byakua would try a few attacks and figure out that he couldn't break through, and being the combat genius he is, he'll notice the fatigue brought on by Susanoo and just outlast it.

I don't think you understand the bloodlust mindset. They lose any form of character they have(trust me if he dicks around he's never truly bloodlusted) and will win under any means necessary and wouldn't even feel pain, they go all it. kenpachi wouldn't dick around because he's simply bloodlusted and going to get the kill no matter what it takes, he loses any character he has otherwise dicking around isnt exactly bloodlusted.

think that Shark guy from Finding Nemo. Literally. Except in this case, the shark always has fun when he kills and messes around even if he really hates the opponent. but when he smells blood(hence the literally), theyre essentially mindless, kenpachi won't be dicking around he'll be, well, bloodlusted.

Using Kenpachi as method to blitz Top tier Naruto speedsters by the whole bleach is faster argument is kind of poot, mainly because Kenpachi is not the fastest bleach character by a long shot.

The main thing that is helping your argument is the fact the distance is 10 meters.
