Kakashi being the greatest copy ninja ever would be able to copy guy's movement. The same way sasuke copied rock lee's moves as well. Why do you think Guy consider's him a rival in the first place. He mentions kakashi's title as a copy ninja many times over in the series which must mean guy at one time or another has probably sparred with him and experienced kakashi for himself.

Kakashi would need to train over time to achieve that speed. He can't just gain it instantly, as even Sasuke had to train to reach Lee's speed. I don't think it was ever mentioned that Kakashi has fought with 7 Gated Guy or can keep up with him in that state.

Kamui is not an instant win. You are also not taking into account the time it takes to uncover sharingan, activate MS, and aim. And Kamuing an object moving towards you in a straight line is easier than Kamuing a moving person who is throwing long ranged attacks at you.
