Grimmjow is faster as previously stated. I don't know if Hierro is a valid argument but if so, that. Grimmjow's fighting style makes use of close range Ceros, which would likely finish Hisoka as I don't believe Bungee Gum could block them (last I saw it had some difficulty with Razor's Nen ball, which could kill a man but doesn't seem to have the strength of Grimmjow's Ceros). Then Gran Rey Cero is way to large of an attack for Hisoka to dodge. Ressureccion boosts Grimmjows stats, making him even faster and giving him building smashing striking power. And to top it all off he can fly and Hisoka can't so really he could just stand up there and Cero until the end.
