How would that work? Shinji would just reverse everything with his Shikai and Gin would be firing in the wrong direction. Then he would be finished.

Gin's bankai is faster than Shinji's shikai. Additionally, it's just a directional swap. Gin won't be swinging, he'll be pointing his sword straight ahead, so even if he did somehow manage to hit Gin in time the only effect Shinji's shikai would have is that Shinji gets impaled in the back instead of the front.
