It's most likely "Orochimaru Battle" by Toshiro Masuda, which is definitely one of my favorites. Great choice. :D

Well, aside from that one, I like almost anything by Yoko Kanno (she did music from Cowboy Bebop, Escaflowne, Wolf's Rain, etc.), a couple of tracks from Gundam Wing, "Sadame" from X/1999, a lot of the music from Shippuden (like "Lightning Speed" and "Departure to the Front Lines")...

...and my most played soundtrack is that of Tengen Toppa Gurren Lagann. Some of the best music I've ever heard on an OST. It gives me chills.
