That wouldn't be truly restoring his clan. I'm not sure what genetics are like in this anime but it would be likely that it's only a 50:50 chance that if Sasuke's wife wasn't an Uchiha, that their kids would have Sharingan. Sharingan is basically the point in being an Uchiha so I don't see how they could truly be Uchiha, all they would have is an acquired surname.
